Ingredients
500 g lamb mince (not lean)
3 garlic cloves crushed
1 tablespoon Coriander powder
2 tablespoons smoked paprika
1 tablespoon ground cumin
1/2 tablespoon salt
Tablespoon of pepper
3 tablespoons lemon juice
1 small red onion diced fine
1/2 cup of fresh coriander diced
1/2 cup of fresh Italian parsley
Teaspoon of chilli powder
2 tablespoons of tomato sauce Heinz is best
2 tablespoons of feta crumbled
2 tablespoons of any flour ideally rice to help bind

Preparation
1. Combine all ingredients in a bowl and mix

2. Place sausage mixture onto pastry sheet around 5cm diameter. (The Alderman uses flaky savoury pastry for sausage rolls).

3. Roll pastry around and over pastry by about 4cm brushing the overlap with egg yolk
to ensure pastry sticks and holds.

4. Position overlap facing up not down to get a better cook on the overlap and prevent leaking.

5. Brush sausage roll with egg yolk garnish with cumin seeds Fan Bake for 25 minutes at 170c

The sausage mixture also makes great meat balls for other dishes.
Serve with harissa-yogurt / Tomato Kasundi.
